Meatless Monday

"Boca Chik'n carbonara"

I know I have been saying for a while I was going to start this weekly blog post... So finally, here it is!
Last night I was wanting some spaghetti but was trying to think of a way I could switch it up a bit from the norm.. SO I came up with this.
Sorry I didn't take any pictures I will next time though. Here is today's quick & delicious "Meatless Monday" Recipe:

-Ronzoni pasta is my favorite and it contains a lot of fiber which is a great plus! We use about half of the box, boil on medium heat with 1 Tbsp of EVOO and a dash of salt.


-For some reason, I love Huntz spaghetti sauce. My favorite flavors are the "Zesty & spicy" Or "Garlic & herb" It is usually pretty cheap as well. But of course you can use any sauce you like! For last night's dinner, I poured it in the sauce pan along with some fresh diced tomatoes and cooked on low heat for about 15 minutes.
-While the sauce & pasta were cooking, I pre-heated the oven to 350* for our garlic french bread, a must have for spaghetti nights at our home! I use Blue Bonnet light margarine (VEGAN) & sprinkle the slices with garlic salt, then bake for 7 minutes.
-I try & serve the dinner with a vegetable, usually peas or corn.
-I put a Boca Chik'n patty that is sliced up (Imagine..Chicken carbonara?) on the top of the spaghetti along with as much of the sauce as you would like. (cook the Boca chik'n patty either stove top, or microwave for 1:15)


-SO delicious!!!

Cars, cars & more cars.

We spent the majority of the day at the PACE event, it was a blast! Cars, cars & more cars everywhere. And nice ones at that. Micah is in the process of getting sponsored by a well reputable company "Unknown Coatings"and his car was the one representing some of their wonderful powder coating work. His wheels were just done last night, it is hard to tell from the pictures but they have a really cool metallic red sparkle in them along with our shift knob, valve cover & some other parts under the hood. It was really fun getting to see some of my old car buddies too. Since I have had my kiddos, I did the smart thing & sold my turboed 1998 Mitsubishi Eclipse 2nd Gen. I sure do miss it! But getting to go to these events several times a year helps with the itch of wanting another ;)

My last car I had was this exact car, color & year only difference was mine was an automatic, and a GST (front wheel drive) not All wheel drive.

We have been getting a lot of wonderful Summer storms lately. Love it!
Levee & I were playing outside & it started raining pretty hard, I told him we should go in so we didn't get soaked but of course, he wanted to play in it. So I thought what the heck, let's do it! And ended up with these beautiful pictures of him playing in the warm Summer storm eating his popsicle enjoying life with a big smile on his face.

A few of my favorite things..

I thought it was time for a "Favorite things" List!

The topic??
FALL!!

Who doesn't love Fall? It is my absolute favorite season and it's finally almost here.
This is my first Linky list and I HOPE you will join in so I can see why YOU are looking forward to Fall.
I want to get to know you all better :) If you can't think of 10, no worries! Just list as many as you want/can.

Here is my list, enjoy!

  1. The Leaves changing to the beautiful, rich colors. It Doesn't get much more beautiful than this time of year!


  2. HALLOWEEN! Countdown is on.. At the bottom of my Blog ;) And has been for months now. Excitement!


3. Going to Gardner Village with my Mom & Nieces. It's a tradition we have done for the past 4 years, and one of things I look forward to most each year! They decorate it SO cute for Halloween and Fall.
Gardner Village contains the outlines of the once bustling early Utah mill industry and history. What remains today is a cluster of retail specialty shops located in restored cabins, houses and buildings nestled adjacent to the Gardner Mill. Now listed on the National Historic Register, the old flour mill is home to Archibald's Restaurant and Country Furniture & Gifts.




4. Pumpkin Spice Lattes.. Need I say more? I absolutely LOVE coffee, but these are the best and worth the price ;)
5. Getting the boots out again! One of my favorite looks is cute tall boots, skinny dark denim jeans, a white shirt and scarf. Here are the boots on my list to buy for this Season. I have some similar, but a girl can never have enough shoes right?

6. Decorating for the Fall season. I talked Micah into letting me go and buy some new stuff this year to decorate & cannot wait! My friend Alisha & I have already planned out our shopping day. She is in as much love with Fall as I am. I will probably go a little overboard.. As I usually do with decorating for the Holiday's. Can't wait! I'll probably start putting Halloween up around the middle of September.

7. Every year Micah and I take a nice drive up to Park City, Ut. to check out the scenery which Is absolutely breathtaking! Once we get into Park City, we go shopping at the Carter's outlet for the kids and this year were hoping to have a little extra to get a couple of things for ourselves if we can. They recently put up one of our favorite (Vegan/Vegetarian friendly) Mexican restaraunts, so we will stop by there along with our favorite coffee shop too. It's the little things like this that I look forward to SO much throughout the year.

8. My Pumpkin Spice candle burning daily in my Home.. Love it!

10. The cool, crisp air. Especially in the mornings and evenings. It's funny, all of the sudden one day you go outside and it's just there! You realize the season has changed once again. You can feel it all around you & It's beautiful!

Enjoying the journey.

Currently:
In my 1st quarter of Nursing school. I know, I know. I have a WAYS to go... The time is flying by so quickly, but I don't think it can ever go fast enough to finally get to Graduation.
I need to stop and enjoy the journey a little bit more, to get to the destination ;)
As I was in my evening English composition class contemplating a final topic for my Compare and contrast paper (ended up deciding to do it on Hitler and the Holocaust..) I was lost in thought for a moment staring at the classroom across from ours.. Those students who were in the Labor and delivery Nursing class. (Which happens to be my field I am going into when I graduate) Jealous as all can be. I wish I were in there, not sitting in a boring composition class. I wish I were at the point of doing my Clinicals and rounds, even if it is 36 hours a week of non paid working, which very well may be the most difficult part of the program, I don't mind at all. Having to get up 3 days a week to be at he Hospital by 4 or 5 am. I just cannot wait! Staring October 4th, I will be in full Nursing mode..And only 1 non-related general class, trigonometry. My first Nursing class will be Nursing Fundamentals I.
Sometimes, I still have to pinch myself, realizing I am finally where I have wanted to be for as long as I can remember. Getting here was beyond difficult, but I made it and it's just the beginning! Can't wait to see what's in store for next quarter. I came across these shirts today from a group I am a fan of on FB, The sarcasm shop I WANT this one in particular. It's perfect, and so true. Being a mother of 2 and a Full-time Nursing student, I have given up a lot. But the payoff will be so worth it. Can't wait to get into Clinicals and assist with my first delivery. Excitement for Nursing school!

Lunch time with Slush

Yesterday was just one of those "My kids were being so sweet & cute all day", kind of days.
It was another wonderful day.
Brighton woke up at 5:15 as he always does and Levin around 10:30. We came down, had breakfast, turned on Nick Jr. on demand, and watched some Yo Gabba Gabba together as I drank a cup of much needed coffee.
Lunch time came along and Levin decided that Slush (His stuffed Alaskan Malamute puppy) needed to accompany him in his big boy chair. Not just on his lap, no no. But seat belted in with him! This little boy sure loves his puppy.. I mean really. He goes every where Levee does. But most recently, I have noticed him having more of an attachment to him and I just think it is the sweetest thing ever.

Not Me! Monday




Welcome to Not Me! Monday. This blog carnival was created by MckMama. She is the mother to five and she makes me laugh and truly contemplate some pretty deep issues. Head over to her blog to read what she and her Family has been up to this week.

I most certainly did not stay up until at least 3 am the last week doing homework & Blogging.. Not me.
I did not wake up with my sweet little Brighton at 5:15 am this morning, with a smile on my face just because I am so excited to hold, cuddle, & see his happy smile & the sound of his little legs kicking with excitement as soon as he hears me walk in their Nursery
I most certainly am not ALREADY planning a party for the release of the Eclipse DVD.. A big party. I'm sure we'll go overboard ;)
I did not get overly excited when I got to Kid to Kid and found Brighton some really cute (18 month) pajamas that were only 2.99 brand new with tags from Old Navy. Not me, no, I never get overly excited over great deals!
I do not take picture, after picture of my cute babies as much as I can throughout the day. 
I did not jump and scream for joy today when I FINALLY found the memory card containing ALL of Levin's birth/baby photos..And most certainly have not already started planning the blog entry..
I am not just absolutely loving Nursing school..Nope, not me!
I am not counting down the days to Halloween, fall, Yo Gabba Gabba show, etc.


Oh wait.. I have done all of this! ;)

Being a mother and having patience?

There are so many ways one may define being a Mother.
It's life changing. It's beautiful. It's rewarding!
And It's one of the most difficult things you may ever go through, but the pay off? PRICELESS.
I am the momma of 2 little boys, Levin 2 1/2 & Brighton 10 months. It is my most rewarding role In life. I have learned so much & have grown up more than I ever thought I would in the last 3 years. Through pregnancy, bed rest, 2 C-Sections, the birth of my children, 2 colicky babies who weren't the biggest fans of sleeping at night ;) Wow, sigh! I have so much more patience than I ever thought possible. Finally! It didn't come easily, but it's finally here. And I am so thankful!
You know those Mother's you see out at the store..Alone.. With 4 or 5 kids..who sometimes may be misbehaving, screaming, yelling, having complete meltdowns, etc.? And there she is, as calm as ever? I have always aspired to be "That mom." Really.
I feel sad, as weird as this may sound, when I see parents grabbing their kids by the arms, yelling and just being plain rude to their child/children in public. On several occasions when I have been out shopping with my 2 boys, I have seen little ones getting spanked, slapped.. I just don't get it I guess? There are other ways to punish them, but please.. Don't hit your kids, not in public, not at all.
I know.... Meltdowns kind of suck.. Let's be honest with ourselves, but there is more than one way to handle these.
It can be SO hard to be patient and calm when one of your little ones is having a complete melt down in the middle of Old Navy screaming at the top of his lungs, kicking, screaming....ya know, THAT meltdown.. (Levee just recently had one of these) I have learned that If you talk to them in a very calm, soothing voice, at eye level, this REALLY helps calm them down. Yelling back gets me no where unfortunately! This, I have learned. I must say, I like the other way better anyways. It has helped me be more calm in other life situations.
I love being a mom, more than anything else. It's pretty awesome. I frequently remind my self, It won't be this difficult forever! There's a light at the end of the tunnel. I hope so anyways ;)

A quick, healthy vegetarian salad

Summer spinach and tofu salad

I know, I know.. I promised a weekly meatless recipe and have been slacking, apologies!! Mid-terms in Nursing school this week & 2 lovely babies.. Enough said right? I'll do my best to make up for the last 2 weeks. ;)
I am a big fan of salads and no, not JUST because I am a vegetarian, but because of all the different options there are for making salads! The "main" ingredient in this particular delectable salad is Extra firm tofu.

Here are the rest:
-1 large bag of spinach
-1 bag of ice berg, or any other type of your favorite salad mix, head of lettuce, etc.
-Fat free raspberry vinaigerette dressing or any other of your favorite dressings
(optional fruits & veggies)
-1 container of organic brocolli sprouts
-2 avocadoes, sliced up
-1 large tomatoe
-1 or 2 cucumbers (depending on how much you enjoy them! I use 2)
-Fresh cut up strawberries

Directions:

-Put your salad mix & diced vegetables into a large salad bowl
-Open the package of extra firm tofu and dice into little cubes
-Pre-heat a pan with EVOO on medium heat, not too high or you will burn the tofu :)
-Place in your cubed tofu and continue to stir so it doesn't stick
-I also use "Bragg's" It's similar to soy sauce loaded with amino acids (available at any health food store) about 3 Tbsp
-I like to cook the tofu until it is firm and a little brown on the edges
-Place as much as you would like a top your salad
-Use salad dressing as desired

1. Do you have any nicknames and if so how did it come about?

Yes, yikes. My dad has nicknamed me "Toad" since I was a little girl. I absolutely hate that nickname though! He still calls me it, to this day. Another is "Lula." Isn't it fabulous? Not sure the origin on this one.. It's just plain funny.

2. What is your birth order amongst your siblings?

I am the youngest of 5.

3. In a movie of your life, who would play your significant other?

Hmmmm. Well this is a good question. But I would have to go with Jeffrey Dean Morgan :) Very handsome....

4. What is currently your favorite song?

Okay, don't make fun. But it is "California girls" By Katy Perry & Snoop Dog. It's just such a fun, up-beat, makes you hyper kind of a song. Those are the best!

5. Are you saving your money for anything right now? Big or small purchase?

Along with Brighton's 1st Birthday, Halloween, (Big Holiday in this house!) And Christmas, we are currently saving to take the babies to:


November 9, 2010 here n Utah. We are so excited they are coming here! This is our Boy's favorite cartoon!
