My little Boogie monsters loved the great grape scent. They have already went through all of the samples! Boogie Wipes are hypoallergenic and made with saline which means they are perfect for sensitive skin. They really help moisturize your little ones nose instead of drying it out. They are even recommended by Pediatricians!
I received my Boogie Wipes just in time, both of my boys had gotten a cold 2 days before they came. As soon as I got my package, I opened it and started using them right away! I was surprised at how well they worked so well. No more having to scrub their little noses to get the mucus off, I immediately fell in love with this product! I have already started recommending them to friends and my other Nursing student friends who are mommy's too.

I am really excited to have been able to review this product! I highly recommend it, especially with all of those winter colds that are just around the corner.

Meatless Monday, pumpkin style!

Time again for "Meatless Monday" For today's recipe though, were going to do it Fall style with a Vegan pumpkin pie. And yes, it is amazing! (Seriously.) Make it for your Family and friends without telling them there is no milk or eggs in it and I bet they'll never taste the difference ;) 
It took me about 5 Pumpkin pie recipes to finally get to the winner last year, it was worth it though. When it comes to Fall, I absolutely love everything that comes along with it and want to celebrate it in anyway possible. This includes doing some special Autumn time recipes. Enough of my rambling.. 
Here it is: 

Vegan style Pumpkin pie amazingness!

Ingredients you will need:

1 1/2 cups of plain OR vanilla soy milk
1 Tbsp Energy egg replacer (Available @ Whole Foods or any other health food store.) 
1/4 cup water
1 Tbsp cornstarch
1 tsp. vanilla
2 cups pumpkin puree (We use Libby's brand) 
1/2 cup flour 
2 tsp. baking powder
3/4 cup sugar OR splenda
1 tsp. cinnamon 
1/2 tsp. nutmeg
1/2 tsp. salt
Keebler graham cracker crust pie dish

Preheat your oven to 350* 
Mix FIRST 5 ingredients in a bowl for about a minute or so (until smooth)
Add pumpkin puree, mix again
Now, add remaining ingredients and mix well until smooth, you don't want any clumps in it :) 
Now, pour into your Graham cracker pie pan, don't fill it too full though, or it will bake over the top.
Bake for 50-55 minutes (check it @ 55 minutes) you want the top and edges to be a little brown and the center to be moist.
Refrigerate and chill before serving 

Serve with Soy whip Or cool whip if you prefer :) 



Water colors, playdough and Cheerios=

A VERY happy and entertained toddler! 
We like to do a lot of fun, educational activities as much as possible! I try and do projects a few days a week, some of our favorite projects are:
  • Coloring with water colors/crayons/markers
  • Finger painting
  • Playdough
  • Practicing flash cards
  • Making Cheerio necklaces
  • Reading at least 20 minutes a day, usually more though
Having a blast! This particular day's shape was all things "Triangles."

The One year ago post

I thought it would be fun to do a "One year ago" post! I love this time of year and want to celebrate it in any way possible.
One year ago (Approximately) today I was 9 months pregnant with Brighton and a stay at home Mom to Levin. We were patiently awaiting the arrival of little Brighton, and he ended up coming 2 weeks early! (Original DD was Halloween.) A new chapter had begun for our Family and it's been more amazing than I had ever imagined it would be. Being a Mother of 2 little boys under the age of three has been so rewarding and challenging at the same time. I feel so lucky and so blessed to be their Mom. Of course we all have our rough days, but they are won over by all the other wonderful days.

I love reminiscing the beautiful moments in life. Making memories along with
keeping & making new traditions!

You know you're a Nursing student when

This has been quite the week so far! To sum it up in one word... Finals. (Yay!) Sarcasm.. 
I haven't been this stressed since Brighton was born and never slept at nights. I have done approximately 16 pages of essays in the past week, a 30 minute presentation with my group on diabetes and studying for my last final in math tomorrow. I am not the best when It comes to math, give me Anatomy, physiology, anything Nursing related and I'm good to go! I have one more quarter of math left of trigonometry and calculus.
I. am. Horrified to say the least! After that, I will be more excited for the rest of school.

So I've come up with a list with some ideas from others to help out, this is properly titled:
You know you are a Nursing student when.....
  1. Rolling book bags aren't as lame as they were in high school. In fact, they are a huge life saver when one book alone is 4" thick
  2. You actually stress, and feel guilty if you miss a class 
  3. You can cry in front of your classmates because you have seen them all cry before as well, especially during hell week, AKA, finals
  4. You really learn to appreciate Holidays!
  5. Dozing off while even standing is a daily occurence
  6. You jump for joy for even getting a C in some classed feeling wonderful that you even passed
  7. When you study day and night for a test, and when you see it you wonder where on earth the professor got the questions from
  8. Multiple answers have 4 correct answers...
  9. Even 4 cups of coffee per day isn't enough anymore, you find yourself drinking it later, and later, and later in the days/nights
  10. You don't have a social life anymore
  11. Surgery excites you more than ever before
  12. Giving up is NOT an option
  13. Satisfactory means the world to you
  14. You now understand why there is a Nursing shortage
  15. PRN, QID, QHS, q4h, all mean something to you
  16. You are grateful to make it through each and every day in school
 I am so thankful to be where I am at today! Every single day is a challenge, but the feeling of accomplishment and actually being a Nursing student is priceless to me. I feel like I am doing something to make life better for my kiddos even if it is a long road ahead. I am definitely Enjoying this journey and making great friends along the way. 

Graduation is 23 months away, here's to 1 quarter down (tomorrow) and only 8 left to go!

5 question Friday

I have to study for finals most of tomorrow and take one more, so I thought I would get this posted up tonight :) 
Happy Friday!

1. If you could speak with a different accent, what would it be (i.e Australian, Scottish)?
Oh this one is easy! Definitely an English accent! Pride and Prejudice style. "Oh Mr. Darcy!"

2. Can you fall asleep anywhere? (i.e floor, couch, deck)

Yes! Brighton gave me good practice his first 7 months of life. He wouldn't sleep anywhere besides my arms and his baby swing. We slept downstairs every night, and forgot what sleeping in a bed was like! I slept sitting up holding him and Micah slept over on the couch so I wasn't alone. 

3. Do you use public restrooms? If so, do you sit on the toilet?
Yes, but I kinda have to since I am in school 5 nights a week for several hours.. Between living on Diet coke and coffee, I may be in trouble If I held it that long. ;) And yes, I sit on the seat with one of those covers on top of it. 

4. If you were stuck in an elevator for 24 hours, what celebrity would you most want to be stuck with?
Well, It took me  a minute to think about this one... But as cliche as this is, it would probably have to be  Rob Pattinson... To stare at ;) OR Dane Cook to be entertained and laughing the whole time!

5. Where did you & your significant other go on your 1st date?
We went to Gecko's Mexican restaraunt!  We had known eachother for about 6 months prior so it wasn't too awkward ;) then went to his house and watched Nightmare before Christmas. It's kinda funny thinking about life before kids isn't it? What did I do with all of my extra time! I love the way things are now though, life is wonderful and I wouldn't change a thing!

Okay, okay. I know, it's a little early to be putting up Halloween already. Especially considering that these went up last Saturday ;) But, I just couldn't wait any longer! Here are a few pictures of our decorations we have put up so far! I missed getting to do this last year because I was so far along and had Brighton early, so decided to go all out this year! I still have a lot to do to the outside, lot's of pumpkins and little ghosts will be added to our tree out front. I will up-date when I get the rest up.

Meatless Monday, Asian style

Tofu lettuce wraps

As we are a Vegetarian/Vegan Family, I am always looking for new, yummy recipes to try out. This was my first time making these delicious lettuce wraps, and boy were they SO good and healthy. Plus, my kids loved them which made it even better!

  • Cooked rice (amount and type is up to you,but we suggest around 4 servings)
  • 1 Head of Ice berg lettuce
  • 1 pound extra firm tofu, sometimes we even do 1 1/2 pounds if we have the extra tofu (drained)

  • 2 3/4 cups chopped mushrooms (your choice,but preferably shitake, it gives the dish a little more kick)
  • 1 yellow OR white onion
  • 4 cloves chopped garlic (fresh)
  • 2-3 thinly sliced carrots (or graded)
  • Soy sauce or Bragg's sauce with amino acids (available @ Whole Foods)
  • salt & pepper
  • Optional: House of Tsang stir fry sauce to put on the top for some extra flavor.
  • Wash your head of lettuce.
  • Chop your the tofu into tiny squares.
  • In a large pan, put in 1-2 tbsp of olive or vegetable oil and turn on medium heat, put in minced garlic and diced onion, sautee for about 3 minutes.
  • (At this time you can also start cooking the rice. Follow the brand/package directions for the amount of rice you are wanting.)
Along with the tofu, go ahead and put in your mushrooms, carrots, and zucchini saute until tender. While cooking the veggies, keep adding a little Bragg's or soy sauce (or tiny bits of water, appx 1 tsp.) to the pan, and cook for about 15 minutes.
Serve on top of the lettuce pieces, along with the rice as a side and House of Tsang sauce as a topping for some extra flavor (optional)

I love this! Seeing them happy, laughing & smiling.. It
Makes everything worth it. All of the many up's and down's from the pregnancies, sleepless nights, hospital stays, food allergies, you name it and these 2 sweet souls make it all worth it. I'd do it all over again. along with anything else for them.

(My Mom gave them a couple yesterday, ironically enough we have been needing some new ones for a while now! I love when that happens.) I believe he actually took him to sleep with him tonight along with his sidekick, Slush.
