The not-so-perfect, but fun Halloweeeeekend.

First off...Happy Halloween! 
I can't believe it has already came and gone. I look forward to this Holiday the most every year. But this year... It was a huge disappointment for me. The weekend started off pretty fun, Friday night was a blast! Our friend Brianne came over and helped me bake some cupcakes and helped me design my Blogging business cards for Bloggy Boot camp. They turned out great by the way! Then Saturday, Micah was out at Miller Motorsports park for a lap battle race in our race car all day so it was just me and the kiddo's at home. The morning wasn't too bad, but shortly became one of the worst days I have ever had in my life. #1: Our dishwasher broke... Awesome right? Hardly. After I had loaded it up completely only to realize it was broken, I had to empty the whole thing and hand wash all of the dishes. As I was washing some silverware, a fork fell down the disposal. Little did I know, Levin had climbed up on his chair and I didn't notice, but he decided to turn ON the disposal, while I was reaching down in there, almost cutting my fingers off. Yeah... Talk about a slight freak out. Scared the hell out of me! Had a little talk with him, and went on doing some more dishes. 
Afterwards, I went up to get ready to run to the mall to get the invisishield put on my new iPhone and had Grandma watch the kiddo's for a little while so I could go. Didn't get too far. #2: As I went out to our car, and tried to start it, the battery was dead. Fabulous. Came back in the house to let my mother in law know what was going on, she offered for me to take her car, sweet! So, on my way I went! Finally made it over to the mall, alive. Yay! #3: All excited, I went in to have the shield re-done (I traded a friend my phone for his) It was supposed to have a life time warranty, so I wasn't expecting to have to pay for it. Think again Marci. The guys were completely rude and honory to me (they must have been having a bad day too) and wouldn't honor the life-time warranty because I didn't have the receipt from a year ago. I really needed it replaced so I just said I would pay the money to have it done, so they went ahead and did it. Told me to come back in about 20 minutes to pick it up. Ladee dadeeeee daaaaa.. I went and browsed around at some stores, dreaming of a new Winter wardrobe, then headed back over. #4: I then went to pay for it, and what do ya know? The damn debit card declines on me. This has NEVER happened to me. But of course, on a day like this, why wouldn't it? I swear, the universe was out to get me. They said, "Well we can't let you leave until we have the full payment." No, really? So I said, ummmm... I don't have any cash on me, is there any way I could call my fiance and pay over the phone with our credit card? They said "well were really not supposed to do that." Okay, well I have no other option, so finally they said okay and I called Micah and we paid over the phone. They were so rude about it! I told them, I swear this has never happened to me before, and apologized again and was on my way home. #5: It was POURING rain, all day yesterday on "Utah's" day for Halloween. (Nobody does anything on a Sunday around here, so we kinda have to go with it.) 
So we had to make some back up plans for Trick-Or-Treating. Decided to head over and take them to do the mall event that was supposed to be going on. This was at about 6:30 and what do ya know? ALL of the stores were out of candy... Because it started at 3:00. I had no idea! I was on the verge of crying my eyes out at this point in the day. I felt so bad for Levee. He was so excited, and ended up with only about 15 pieces of candy MAX. And most of it he couldn't even eat because it had dairy in it. So we headed home and good thing we only had a couple of Trick-Or-Treaters here so we had some treats left over that I snuck into his bag ;) The night did get better from here. Our wonderful friends Eric and Bekkah were over for the night with us, we had Vegan tacos, carved pumpkins and watched a scary movie after the boys went to sleep. The evening was pretty great! But wow, I have never had that crappy of a day. 

And as for today.....The actual day of Halloween, It wasn't too much better unfortunately. But I tried to make the best of it and make it fun for the boys. 
After Micah did his best to fix the dishwasher, we realized it isn't fixable and we aren't able to pay for a repairman to come out and look at it, so were just out of a dishwasher. I don't mean to be so 21st century, but I am ALREADY dying without a dishwasher... It is so time consuming. I honestly haven't a clue how I am going to find time to just sit, sorry, stand and wash dishes during the day when they build up. Along with paying attention to my boys, breakfast time, snack time, lunch time, activity time, homework at some point, cleaning up the house, daily chores, etc, etc. But, I am sure I will figure it all out at some point. I am just so not looking forward to this. I hope one day to have it fixed! This should be fun for now though. Other than complaining about the broken dishwasher, I had a ton of studying to do so I headed over to Barnes and Noble to get some home work done. Afterward, came back home and made some leek and potato soup for Halloween dinner. At least that turned out great, Everyone loved it! (I will get the recipe up soon.) My night tonight is ending with this lovely, long post and then some more homework.

Dear Levin & Brighton,

I tell you about 50 times a day how much I love you and give you kiss, after kiss, but I don't think you will ever know just how much I love you. You are my world, my everything. You make my <3 smile. Everything I do, I do for you. I try and "better" myself as a Momma daily, as I am learning more and more how to become a better momma for you. You both teach me something new every single day! Okay, more like 50 things but you know what I mean. You both are so amazing... Everyday, you both are learning more and more things and I can't believe how fast you are growing up. Too fast for my liking! I have to admit though, it is pretty wonderful watching all of the new things you are learning and doing daily. 

I know how sad you get when I have to leave to go to school at nights and I am sorry for making you cry. Little do you know, I cry too when I have to leave you... I hope one day you will understand I am doing it all for you! You two deserve the very best lives and I will do everything in my power to give it to you.
I am so *beyond* blessed to have YOU TWO as my children! You make me so happy, every single day. I love you more than words could ever say. Thank you for lighting up my life and giving me countless smiles, my sweet little boys.

Witches Night out!

 I have been looking forward to this weekend for a while now! One of my great friend's Bekkah and I attended Gardner Village's "Witches Night out." 
Gardner Village is a cluster of cute little retail specialty shops located in restored cabins, houses and buildings located in West Jordan, Utah.
Vintage pioneer architecture, antique fixtures, red brick paths and bridges over a pond, create a relaxing and enjoyable atmosphere for shopping, dining and discovering some of Utah's most colorful history. If you ever come visit Utah, it is a must to stop by and visit this beautiful place!

They have the village decorated with as many witches, pumpkins, hay bales and corn stalks as you can imagine, it is so festive! I personally think it is part of what makes this place so much fun. During these 2 nights, woman come from all over the country to celebrate this event. There were so many people there, it was nuts, and every single one of them was dressed up. We saw some pretty fun, decked out costumes! 

We started the night browsing all of the many village shops and fun decorations then headed over by Sweet Aftons candy shop and got some treats, a caramel apple for me (amazing!) and Bekkah got some cinnamon glazed almonds (also amazing!) They had a costume contest on the main stage so we went and watched to see all of the fun winners . Some of the costumes were so fun! And they had some cute accessories to go with them. After watching the contest we did a little more browsing and I bought Levin a little light up wand, which he loved. It's the "new" favorite toy for him and Brighton now! After shopping, we waited in line for 20 minutes for a yummy (seriously) bread bowl filled with potato soup and a diet coke. The wait was so worth it, that was the best soup I have had in a while! As we had our soup, we sat and chatted about life and made some more fun plans for December, then enjoyed the rest of the night at my house with our guys and watched a scary movie. It was a wonderful, perfect night!

Gardner Village is definitely a tradition for me and my Family, we look forward to going back every year for all of their fun activities and decor. I love this time of year as it's full of so much tradition and Fall celebrations!

Pumpkin chocolate chip cupcakes {Vegan style}

If you love Fall {And pumpkins} as much as I do, you're going to love these cupcakes! They are simply put, amazing. Really. I made 18 the day before yesterday and between friends, Micah's work and Family, they are already gone! I have some awesome friends whom are not vegan, they came over last night and one in particular hates, hates anything with any "vegetables" in it, and he loved them! I was shocked he even ate one. Micah took a couple to work and all of the ladies there loved them, so much so that I have to bake a ton for him to take to a pot luck next week. I'm pretty excited! 
I got the recipe from the best Vegan cupcake recipe book there is out there, "Vegan cupcakes take over the world." If you have friends or Family that can't have dairy, but still want to bake something for them this holiday season bake a treat from this book. They'll love it! 

Vegan pumpkin chocolate chip cupcakes with cinnamon frosting:

1 cup canned pumpkin
1/3 cup oil (I used canola)
1 cup granulated sugar
1/4 cup soy milk
1 teaspoon vanilla extract
1- 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 vegan chocolate chips (Ghiradelli semi-sweet chocolate chips are vegan)


1. Pre-heat your oven to 350* and line your muffin tins with cupcake liners

2. In a medium bowl, stir together pumpkin puree, oil, sugar, soy milk and vanilla. sift in the flour, baking powder, baking soda, cinnamon and salt. Stir together with a fork-Don't use a handheld mixer as it will make your batter gummy. Once it is well mixed (no clumps of anything) fold in your chocolate chips. 

3. Fill your cupcake liners about two-thirds full. (I used an ice cream scoop!) Bake for 20-24 minutes. Transfer to a wire rack and let them fully cool before you put your frosting on.

Cinnamon "buttercream" frosting:

3 cups of powdered sugar
1/2 cup of non hydrogentated shortening (I used vegetable)
1/2 teaspoon ground cinnamon
1/2 cup vegan margarine (I used blue bonnet light)
1 tablespoon of soy milk
1 1/2 teaspoon of vanilla extract


Beat the shortening and margarine together until well mixed and fluffy. Add your powdered sugar and cinnamon and beat for 3 more minutes. Now add your vanilla and soy milk, beat for another 5 minutes until fluffy.
It says to keep at room temp, but I like to put it in the fridge to make it a little more firm. 

To assemble your cupcakes:

If you don't have a parchment bag for frosting, you can use a plastic sandwich bag! Cut a small hole in one corner after filling it with your frosting. You can use any decorating tips you want depending on the design you want to achieve. I don't have anything cool like that here, so I just cut the small hole and swirled it on :) 

And voila, you now have cute and fabulous tasting Vegan cupcakes!

Brighton up-date/well child check.

Brighton just turned ONE over this past weekend
 {October 16, 2009, 8:46 p.m.}
 Can I just say how fast this year has gone by? Way too quickly. I have enjoyed every single minute of it! Brighton is growing perfectly. Here are his stats from his 1 year well check:

Weight: 24 lbs. {60th percentile}
Height: 30 1/4" {75th percentile}
Head circumference: 19" {90th percentile}

Until now, he has been in the 90th percentile in all areas! He is getting so big.

His recent biggest achievement? 
He started taking his first steps about a month ago but wasn't all too interested. As of Monday October 18th, he is now walking everywhere. I put up a video earlier of him doing his "Frankenstein" walk. Check it out, it's pretty cute.

Apple sauce
Soy yogurt
Smart dog "hot dogs"
And.. loves to "slurp" his spaghetti! I love watching that! 

Happy 1st Birthday our little "Pork chop" I love you with all of my heart. You bring so much joy to our lives!

1. Who is the better cook, you or your spouse?
Easy one. ME! I must admit, he is better at making Top Ramen though ;) 

2. How often do you talk to your mom?
Almost daily, we are pretty close. We talk about almost everything! Love my Mom.

3. Are you adventurous in the kitchen or stick to the recipe?
Being a vegan family, I tend to be adventurous when I cook. A dash of this, and just a littllllle more of that. Depends on the recipe though, with some things I know I have to stick to the recipe or or it won't turn out. 

4. Is your second toe longer than your big toe?
I literally just stuck my foot out from sitting with my legs folded to look. I thought I knew this one? (dork!) Umm, yes it is. Just a little bit though! 

5. Do you dress up for Halloween? (Bonus question: What will you be this year?)
If you didn't already know.. I LOVE Halloween. I really do try to dress up every year. This year I am being a witch! Found my cute "costume" at Target. And on clearance I might add! (A black mesh looking dress.) And my Mom had an extra hat from last year. Should be pretty cute!

Vegan chocolate Boilin' Cauldron cupcakes

Yesterday was my little Brighton's 1st Birthday. He had such a fun day! (I will be doing a blog post with pictures as soon as I can) The hit of the party was my "Boiling cauldron" chocolate Vegan cupcakes with butter cream frosting. They turned out perfectly! And nobody even noticed they were vegan until I said something! With the help of my great friend Megan, my Mom and my niece Teesha, we got 58 cupcakes done is 4 1/2 hours. It took me a while to finally decide on a recipe, and looks like I chose the perfect one. The cupcakes were so worth the time! I found the cute idea on the Wilton website.

Here is the complete recipe for your little ghosts & goblins:

Amazing Vegan chocolate cupcakes

1 1/4 cups flour
1 cup sugar
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup vegetable oil
1 tsp apple cider vinegar 
Pre-heat your oven to 350 degrees. Prepare a 12 cup muffin pan with paper liners or grease and flour the cups well.
In a medium bowl, mix together flour, sugar, cocoa, baking soda, and salt with a whisk. Make sure that all the ingredients are well blended. Add the warm water, vanilla, oil, and vinegar. Stir until well combined. Do not over-mix.
Fill muffin cups 3/4 full with batter and bake in the center of the oven for 16 to 20 minutes or until the cakes spring back when you lightly touch the center. Remove from oven. After 5 minutes, carefully remove the cupcakes from the tin and let cool completely on a wire rack before putting on your frosting.

"Butter cream" Frosting
1/2 cup non-hydrogenated shortening
1/2 cup non-hydrogenated margarine, I used Blue bonnet light (Vegan)
3 1/2 cups powdered sugar, sifted if clumpy
1 1/2 teaspoons vanilla extract

Beat the shortening and margarine together until well combined and fluffy. Add the sugar and beat for about 3 more minutes. Let chill for about 10 minutes after you are done mixing.

I had to replace the chocolate ghosts with marshmellow peeps since my kiddos can't have dairy and they ended up looking even more cute! I just stuck a toothpick in the ghost to help it stand up a little better :)

Fall-tastic weekend, part {3} Train rides and a party!

Part {3} of our weekend festivities for October! 
{Saturday October 9th}
The day was started with attending Levee's little best friend's 3rd Birthday party. They had a Princess and Prince party for her, along with home baked cupcakes and a bouncy house. Lev got her some really fun presents! He was very excited to give them to her. After her party we headed to meet up for dinner at one of our favorite (vegetarian) sushi restaurants, "Demae" with Eric and Bekkah.  Then we were off to the much anticipated Haunted train ride! It was a spooky good time! I have been wanting to ride the Heber Creeper train for so long, It was such a blast and the kids loved it. We'll definitely be going again next year! 
Speaking of Birthday's... Brighton turns ONE on Saturday! I can't believe how fast the time has gone by. A whole days worth of celebration's are in store. His party is going to be a blast, I can't wait to throw this party for him!
