Pizza time!

Who doesn't love pizza? 
I know, I know, when one hears the words "Vegan Pizza" They may think...Yuck.Well my friends, I think I may just have finally found the perfect combination of ingredients to make a delectable vegan pizza. When it comes to cooking vegan and making it taste great, it really has a lot to do with the ingredients you choose. Sometimes, it can take a lot of experimenting and that is just what I have done to finally get this recipe for the perfect vegan pizza!

The pizza crust is how you will determine how hot you will be preheating your oven

Here is what you will need to make your vegan pizza: 
  1. Any vegan pizza crust you would like to use (Some of Pillsbury products are vegan, or you can also find ready-baked crust and use that as well)
  2. Tofutti vegan cheese (Best vegan cheese there is out there!)
  3. Yves brand pepperoni's (I use half of the package)
  4. Two large hot house tomatoes, diced
  5. One package of presliced mushrooms
  6. Two small cans of sliced olives
  7. One jar of artichoke hearts
  8. Soy Parmesan cheese
  9. Vegan pizza sauce (We use Ragu brand)
  10. Any other veggies you would like on your pizza
  • Prepare your crust with plenty of your pizza sauce
  • Lay your cheese out over the sauce
  • Then lay out your pepperonis
  • Put on all of your veggies you would like
  • Sprinkle on a little soy Parmesan cheese
I baked ours at 425* for 15 minutes, until the cheese melted and the veggies looked done

Let cool for about 5 minutes or so, then serve and enjoy!

Baja Tofu Wrap

I am not a vegetarian, but I'm no meatatarian either. Truly I am a Weight Watcher-atarian. I came up with this recipe on a Saturday afternoon when I was in a bit of a rush, believe it or not. I opened the fridge hoping to find something healthy ready to grab and go but alas life is never that easy. Instead I saw a bit of tofu left from a dinner I had prepared for my beautiful friend Marci (the owner of this blog) and her family earlier in the week and some left over sautéed onions and peppers from fajitas the night before, it was like the light shown down from above and suddenly I had a gourmet lunch in nothing flat!

What you'll need:

1 package extra firm tofu
2 plates or cookie sheets
4-8 paper towels
1 package whole-wheat 96% Fat Free Tortillas
1 medium yellow onion
1 red bell pepper
1 yellow bell pepper
1 lime (optional)
sour cream
taco sauce (I prefer the green mild)

First things first. You need to press the water out of the tofu. Slice the tofu into 1/2 inch slices. Place two paper towels on one of the plates or cookie sheets. Lay the tofu on top of the paper towels and cover with two more paper towels. Next, place the second plate or cookie sheet on top and put some heavy objects on top. I like to use cans of soup, usually 5-6 of them. Leave the tofu like this for 30-40 minutes. If your paper towels get completely saturated with liquid it may be a good idea to switch them out mid-press.

While you're waiting, now would be an excellent time to get your onion and peppers sliced up.

I'm no expert on tofu, in fact when I came up with this recipe it was only the 2nd time I'd ever cooked tofu. My directions for the tofu are based on very little experience but seem to work well. So, when your tofu has been pressed cut it into about 1/2 inch squares. Season the tofu with spice of your choice. I like salt and pepper or seasoning salt- they both taste great.

Sauté them over medium heat. I spray my pan with cooking spray to keep the calories as low as possible but olive oil would work fantastic as well! Be sure to turn the tofu at least once to brown at least 2 sides. Doing this adds flavor and well just makes it look yummy! If you are a starving student like me and only have one frying pan just put your cooked tofu in a bowl and cover it with foil to keep it warm while you sauté the veggies.

Again I start by spraying the pan with cooking spray and sauté the onion and peppers over medium heat. Cook until they are softened but still somewhat crispy. Don't stir them too much so that you can get those tasty little charred edges on the peppers.

While you're waiting, now would be an excellent time to get your tortilla ready to go and if you haven't already grab some sour cream and taco sauce of your choice. I used mild green sauce for this dish.

When the peppers are getting close to being done go ahead and load up the tofu on your tortilla. Add the onion pepper mixture and top with the sour cream and green sauce. I also make a chicken version of this meal and squeeze fresh lime juice over the chicken - it would probably taste just as delicious on this dish. Roll up it all up and enjoy!

Happy Thanksgiving 2010

What a blessed Thanksgiving! My Dad was home with us this year, doing a million times better than he was last year. (You can see the post about his strokes and ICU hospitalization here) That, along with giving food and a little money to a homeless Family and their dog I saw freezing in 10* weather, made this day even more heart warming than I thought it could be.
  I love Thanksgiving, not for the food, but for the feeling. The feeling of being over whelmed with all that you are thankful for. For me it is, my children, Micah, our Families and friends, a roof over our heads, a heater, running water, a car, having food in our pantry, our health... I could go on, and on. But, that would make for a really long post! It's amazing when you really think about it all that we have to be thankful for in America.

 For the first time ever, we had our own little Thanksgiving dinner after we finished visiting our Families homes. We cooked a Tofurky Turkey, mashed potatoes & mushroom gravy, peas and vegan pumpkin pie. 
This was our first time ever having a Tofurky Turkey and believe it or not, it was SO great! I am one of the pickiest vegetarians out there and I even loved it. It even had wild rice stuffing inside! We all were very happy with it and are planning on having it again next year, if not sooner.

Wordless Wednesday-Levin edition

Ohhhhhh, boy oh boy.

This happened within 5 minutes while I was changing Brighton's diaper.. My mascara was everywhere! My favorite, MAC mascara... But, I was more humored than upset, I mean, look at his cute little face! How could you get mad at that? He sure thought he was funny.

Eating some Vegan Halloween cupcakes.. With dark gray frosting (They were supposed to be brains.. Fail!) He sure loved them though!

His mouth was stained this color for a couple of hours. I started panicking a little, after I tried to wash it off and it wasn't going anywhere. Laughed about it later though!

Eat. Pray. Love.

 Can I just say how in love with this movie I am? Really, I absolutely adore it. It's up there with Pride and Prejudice and Harry Potter. I went and saw this heartfelt movie with my girlfriends and we all fell in love as soon as it started.  As we were walking out after it was over, we were all discussing how excited we were for it to come out on DVD. It finally comes out this Tuesday! 
 This fabulous movie is based on Elizabeth Gilbert's Memoir and is a must see for any woman looking for a little inspiration in life. It reminds you how wonderful it is to be a woman, and just how amazing life is. Not only is it a sweet love story, but it is shot all around the world and shows various cultures and some breath-taking scenery from Italy, India & Indonesia . I fell in love with Italy and Bali, Indonesia even more from this movie. The food, the scenery, the history, it is all just beautiful. Along with Julia's wardrobe! I loved almost all of her outfits in this movie, she is just beautiful. 
It was a beautiful experience to live vicariously through Elizabeth on her journey of self-discovery. I can't even begin to fathom how amazing of an experience this must have been. I hope to be able to do this one day with my husband, when I'm old and my children are all grown up. Hey, at least I have one thing to look forward to related to growing old, right? I definitely plan on at least making it to Rome, Italy; Bali, Indonesia; and Egypt. 
 My friend Megan and I are having a Eat. Pray. Love movie party this coming weekend. We plan on celebrating it with some amazing food and desserts. Really looking forward to it! Meet me Monday


1. How many pillows do you sleep with?
I sleep with just two, one fluffy and one more firm.

2. Where will you eat on Thanksgiving?
Our first dinner will be at my Mom & Dads. I am bringing a Vegan pumpkin pie for everyone and we will just munch on some veggies and treats. Our second dinner will be at Micah's brothers house, then I am making a big Thanksgiving dinner for my little Family at our house. My first year! And my first year baking a Tofurky. I am really looking forward to it. 

3. Would you rather go to a party or host a party?
Definitely hosting. If I had the opportunity, I would love to host a large dinner/holiday party. I have done my kiddos Birthday parties, but I have always dreamt of being a Wedding Planner.. Oh and opening a Vegan cupcake Bakery, but that's a whole other topic.

4. How many purses (for the guys..wallets) do you own?
At least ten, maybe more. But I do have a favorite that I use all the time from Target. 

5. What is your favorite kind of seafood?
Ummmm, none! Even before I became vegetarian, I would never touch it, never been a fan.

5 Question Friday

1. What Christmas song do you loathe?

I have been listening to Christmas music since about a week after Halloween. {Nerd alert!} I'm not the biggest fan of... "Jingle bell rock" though. Yuck! My favorite is holiday tune is "Silent Night."

2. Do you and your significant other cuddle at night or sleep on opposite sides of the bed?
We totally sleep on opposite sides of the bed, completely! All sprawled out, we enjoy our sleeping space. But we do cuddle when watching movies.

3. Have you ever had surgery?
I have had two Cesarean sections with my little ones and had my wisdom teeth all removed in the same, horrible day. 7 hours later and they were gone.
{Does that count?}  

4. When do you typically have your holiday shopping done?
This kind of ranges from year to year, but usually by the week of Christmas. I really enjoy the Holiday spirit while out shopping that close to Christmas! 

5. If money were not an issue (and you HAD to pick something), what would your ultimate luxury item be?
A 2011 Jeep Wrangler Rubicon OR 2011 Jeep Grand Cherokee, I would happily take either! Jeeps are my absolute favorite. I plan on getting one of the two sometime after I graduate Nursing school. I have owned three Jeeps, two Grand Cherokees and a liberty.  Can't wait for another! Definitely my ultimate luxury item.

In need of some advice-Blog Design

I have finally found a fabulous blog designer to do my design for me, {Eight days designs.
I am beyond excited! {Yippee} 
I have waited for this for a very long time. I am overwhelmed with all of the options though.. Like really, where do I even begin? I think this is kind of funny, that I have wanted this and dreamed of how it would look, but have no idea what I really have in mind. 
I'm sure I'm not the first though... I can't be! 
I really love yellow, gray and white. 
Also, torquoise, fuschia pink and green. 
My blog is a more "natural" type of blog, so I was thinking I should stick with more natural colors and nothing too bright.
Any ideas for those colors or other suggestions? 
I want something classy, simple but yet different. 
For you as other bloggers, what is your favorite design layout?

The Holidays, a miracle and Black Friday.

The Holiday season is just around the corner, are you ready for it? I am really looking forward to it this year. I can't believe Thanksgiving is a week from today! We will be celebrating it vegan style of course and this will be my first year cooking a full Thanksgiving dinner for my Family. We have 3 dinners Thanksgiving day that we will be attending and I will be making a home made vegan pumpkin pie for each one. I really love baking and cooking so I am looking forward to it!

Last years Holiday season was well, not so good. My Dad was in the ICU at this time suffering from two strokes that occurred within two weeks of each other, pneumonia, a blood infection and on a trache tube fighting for his life. I will never forget, it was about a week before Thanksgiving last year and the hospital had called our Family letting us know that they didn't think he was going to make it much longer and told us to get up there right away. This was the darkest time of my entire life, I have never been more scared. The thought of loosing him, was unbearable. 
By some miracle, he slowly came back around and recovered from all of this. He was in the ICU for a month and a half, finally got well enough to be transported to a local hospital for an additional two months, then finally to a specialty hospital for assistance in re-gaining all of his functions back on the left side of his body. After a total of about five months he was finally able to come home and have in-home specialized care. He is finally back to his old self after a year!

I have so much to be thankful for this Thanksgiving and Holiday season, and I don't plan on forgetting it. This is an extra special Holiday season for our Family and I can't wait to get the celebrations going! Along with the Holidays comes one of my favorite Family traditions that I actually started 5 years ago with my Sister. It has slowly grown to be My sister, me, and some of my girlfriends. What is this tradition?

Do you partake in the craziness? I mean, really. We must be crazy to get up to go shopping at two in the morning, bearing the cold and all of the other crazy women right? It is so worth it though!
