My mini make-over

Two weeks ago, I decided to chop off a lot of my hair... I usually regret it after a couple days, but this time I am loving it! Sad, but true- The last time I cut my hair was when I was 7 months pregnant with Brighton! Over two years ago, how bad is that? This salon visit was definitely due!

I had scheduled a baby sitter for the day and headed out at 9 am. After I hit up Starbucks, I went to the Aveda Institute hair school and was treated like royalty.. For 6 hours! It was- awwwwwmazin'. I had my hair cut first, a deep conditioning treatment paired with a hot towel facial, a shoulder and hand massage and a nice pedicure last. I was offered Tea, water and my stylist was beyond sweet. I Loved it! Oh, and splurged on my first nice hair products. All in all, it was a fun-much-needed day! Oh- and I almost forgot... I got my $50.00 gift certificate to the Aveda school on city deals for just $21.00! I love a good bargain. You have no idea just how excited I was to find that!

Lemon Rice with seasonal vegetables

I am a sucker for rice...Well make that any carbs. Just love em. What can I say? It's probably why I have failed at loosing any weight in the last two months. My good friend Megan introduced me to this amazing recipe about a year ago, I lost it and just recently found it again. I LOVE it- not only for the fact that it is easy peasy, but because it is also healthy and really tasty!

Note: This dish is courtesy of Weight Watchers- I am not on Weight watchers, just love this recipe.

Lemon Rice with Seasonal Vegetables: 

Sorry, I'm not the best food photographer!

*This dish can be served on it's own OR as a side dish*

Preparation time: 10 minutes
Cooking time: 20 minutes

What you'll need:

  • 1 cup uncooked brown rice, long grain is preferred
  • 1 tsp turmeric
  • 2 1/2 cups (or more) broccoli florets
  • 1-2 medium fresh carrots- peeled and sliced thin
  • 1 medium lemon- juice and zest
  • 1/2 tsp black pepper
  • 1/8 tsp salt

Instructions:

1) Cook your rice according to the package instructions- Add your turmeric to the rice water.

2) While waiting for the rice to cook, heat a medium saucepan filled with 2/3 cup water to boiling point, add broccoli and carrots and let them cook for appx. 5 minutes (or you can let them steam in the microwave, whichever you prefer.) Drain the water out of the veggies and add back to the pan. 

3) Add your rice to the vegetables. Stir in the lemon and zest; heat thoroughly over low heat. 

4) Season to perfection with salt and pepper; serve! 

*For a variation, you can substitute shredded cabbage for the broccoli and a turnip could replace the carrot. 

*This recipe is vegan

I, me, yes- Marci here at Balancing Stilettos and Scrubs was featured on the SITS girls website on Monday! I have been waiting for this day for almost a year now! It was everything and more than I had hoped for. I have never been shown so much love and support here on this blog, ever! I was left grinning from ear, to ear. You guys rocked my socks and have given me more motivation to be a great Nurse, than I have have ever had before. Thank you, from the bottom of my heart. How to keep it all together

Today is August 15th... Can you believe it? I don't know about you but I am pretty giddy that fall and school are just around the corner! I have been on a nice, much needed break for the last month and a half and have been enjoying every minute of it! I start my first semester at a new school next week.. I'm a little bit nervous, but who isn't on their first day? First days of school in college are filled with a lot of emotions. It's so different than it was in grade school, or even high school but oh so much more fun, right?! (Well at least I seem to think so..) For this fresh new start, I went school shopping with my sweet Mom for some new outfits and some fun school supplies. It brought back a lot of great memories from my childhood!


This coming up Fall semester I will be taking more credits than I have ever attempted before, 17. Three of the classes are re-takes from the private institution I was enrolled in over the last year (that weren't allowed to transfer to my new school) so hopefully it won't be too bad. I got A's in all three last time so hoping for a good semester, shooting for a 3.8-3.9 at the very least.

As a Nursing student, staying on top of my studying and being organized are extremely important! I wanted to share some of my ideas for staying organized and keeping it together while being a Mom of two toddlers, a part-time CNA, volunteer and full-time student. There is no reason you can't do it if I can, you can. Seriously. :)

How to keep it all together:

1. Invest in a day planner. I actually have two, one for personal organization, ie: Levin's  preschool info, field trips, the boys doctors appointments, etc. The other stays in my backpack and I use it to log all assignments, tests and all things school related. 

2. Plan ahead, with all things possible. 
Make your dinner menu for the week on a Sunday, so before you go grocery shopping you can have all your meals planned ahead of time for your grocery list and go get it over with! Two less things to think about for the rest of the week. Hurray!

3. Make a schedule and stick to it!
If your days start early like mine are about to- 4:30 am, you want to make a schedule and do your best to stick to it. Try and make at least 15 minutes for yourself some where in your long days, it helps more than we know! Forming a schedule helps the days flow a little better than they may have without one and we kind of have an idea how the day is going to flow. Also, try and make time for a little exercise. I know, I know.. Blegh right?

4. Study, daily!
If you do it everyday, it becomes a habit. And a good one at that. It can be time consuming, but so worth it! I make it priority to do so every night. I can't go to sleep until I have studied for the day. With this new semester, I may start doing more in the mornings before my kids wake up on the days I don't have class instead of getting into bed at 2-3 am. 

5. Take a nice long bath at least once a week!

6. If you are in a relationship or Married, keep a date night set aside for you and you loved one at least once a month! It's nice to really sit down together for dinner, coffee, whatever it may be to just catch up on everything! Even if you're not in a relationship- plan a night out with some good friends!

7.Hang in there! If you're having a bad day, try and remember five things that made you happy and smile from the day before. If these things really rocked your socks, write them down! I always keep a notebook with me wherever I go to write down thoughts, ideas, inspiration, etc.

Koi Scrubs

Recently I was approached by the fashion-forward scrub company,
Koi scrubs to see if I may be interested in taking part in doing a review of their scrubs. Umm, how could I say no? Their scrubs are some of the best available on the market today. I had heard of Koi previously and was pretty excited that I had been chosen for this opportunity! Their scrubs, are top of the line, Great quality, comfortable, cute and they get a lot of attention! Remember back on the day, when scrubs were plain ol' boring? Blah-boring colors, not flattering at all to wear? Wow, we have certainly come a long way!

Koi scrubs are very flattering and the design options are endless! Whether you are going for comfort for one of your many long shifts, or if you're like me, style- You can have both with Koi scrubs. There is a great selection of solids, patterns, prints, almost anything you could want. They have several different types of “styles” to choose from as well. One of my favorites besides the Abba top I reviewed is “The Bridgettte top." It is made up of a contemporary print with two convenient pockets in front.

My personal favorite style of pants is the “Zara pants.” They feature an elastic waist band, which normally I don't like- but these pants fit amazing! The snap button is placed on the side, with a cute zipper that has a detailed heart hanging from it. (Details, details- they are never put aside with Koi scrubs!) The legs are flared so they fall over your shoes/clogs nicely and look great. The other great thing about these pants? They come in different length options! Ranging from petite-tall.Along with all the pockets a Nurse or Physician could ever need!

You can't go wrong with any of the scrubs you choose from Koi. Not only will you look great on your shift, you will be extremely comfortable which is a plus! One last thing to worry about right? They also carry a great line of scrubs for men along with fabulous lab coats.

*The sizing options: Their scrubs are very "true to size" and I love that they have petite-tall options!

My two lovelies.

I feel like I am behind at getting a "Levin and Brighton" current stats/favorite things post up! They have grown so much and like all other kiddos, wayyyyy too fast! I take pictures of them almost every day, probably a few too many (If there is such a thing!) Here is just a glimpse at them, what they have been up to these days and what they're loving at this stage.

Let's start with Levin:


Age: Today you are 3 years and 4 months old.
Favorite food: Boca Chikn's, Nature Valley fruit and nut bars, graham crackers, oatmeal, strawberry soy milk.
Favorite movie: Tangled and Harry Potter
Favorite thing to do: Play outside with all your new friends here in the neighborhood, play your Leapster, play with cars, trucks, books, color, paint.
Current accomplishments: You got potty trained in less than 3 weeks!
Favorite cartoon: Busy Town Mysteries and Word world
Favorite activity to do: Cheerio necklaces, and anything with our foam sheets, water color painting.
Other favorite things, friends, toys: Your new little best friend is Oliver and Hagan. You 3 will be starting preschool together soon!

Now onto sweet little Brighton: 


Age: Today you are1 year and 9 months old!
Favorite food: Boca Chikn's, strawberry Kashi bars, Apples & Peanut butter, Scooby Doo fruit snacks, Wheat ritz crackers, graham crackers, oatmeal, chocolate soy milk.
Favorite movie: Tangled- You absolutely love Paskel
Favorite thing to do: You love to play with any cars and trucks you can get your hands on, you love me and daddy to read books to you, coloring and to sleep with ALL of your little animals.
Current accomplishments: You are talking a lot more these days! You love to ask "Whats that?" and wave/say bye bye when Mommy leaves to work/school.
Favorite cartoon: Busy Town Mysteries, Wonder Pets. 
Favorite activity to do: Color and read books.
Other favorite things, friends, toys: The light up fish tank in your room, Tigee, your blanky, your binky and my stilettos ;)


You two are my world, I love you more than you will ever know!
